We have particular preference for raw tuna, so procure “belly bite.” [What is “belly bite?”] It is the most fatty portion of tuna. /p>

We select fresh seasonal natural fish swimming in Toyosu, and get them “ikejime” by broker with elderly technique and sent directly to this restaurant. [What is “Ikejime?”] It is a method to keep the freshness by (i) paralyzing live fish, (ii) inserting a spiral needle into the medulla oblongata to destroy the nerve and to get live fish into a state of brain death quickly, and (iii) draining blood. The fish is dead but its body remains fresh and alive. Then the fish’s body have a firm and elastic mouthfeel.
Particular preference for ripening
The fish is quickly cut, sandwiched between “wood shavings”, and ripen. [What is “wood shavings?”] Thin wooden boards. It’s kind of Japanese-style kitchen paper made by thinning wood like paper. It has bactericidal and antibacterial effects and absorbs excess water and odors. Natural products are treated using natural products and aged by the traditional manufacturing method that enhances the original taste of fish.
Particular preference for water
All of the water used in Edohachi is made from “fundamental water.” [What is “fundamental water?”] Fundamental water is made via what is called activated mineral water manufacturing method, and it is an epoch-making technology that has been patented in the world. The method uses water that has antioxidant power and penetrates the body. Fundamental water is also called as fermented water or reduced water. We have particular preference for not only the ingredients but also the water we use for preparation of foods. From a scientific point of view, “fundamental water” is water that has the ultimate reducing power that can suppress the oxidation of biological cells by “power of water = energy.”
Particular preference for rice
Delicious rice is a matter of course. We carefully select only the rice that is particularly suitable for sushi from ones grown, harvested and polished by relatives’ farmers in Mooka City, Tochigi Prefecture. We receive such rice from relatives’ farmers directly.
Particular preference for salts
Among the many salts, with conscious of health we select salts that are made with the flat kettle manufacturing method. This method was developed by Mr. Nobuhide Matsuura (late) known as “Charisma of algae salt” who figured out ancient salt made in the Seto Inland Sea. It is a simple manufacturing method derived from nature using only seawater and seaweed. All ingredients are from the blessings of nature. The raw material is the beautiful seawater of the Seto Inland Sea pumped from the coast in front of the salt factory and domestically produced sargassum which is a condensed natural flavor. The sea, Kamikamagari Island, Hiroshima Prefecture, is selected as one of the 100 best beaches in Japan. Please use the salt of your choice to sprinkle on your favorite ingredients. Sea urchin, white meat, squid, octopus, etc. are recommended.

Jabara Sake
Liquor made from citrus “jabara” bellows harvested in Wakayama Prefecture.
It can also be used as a liquor material to expell evil spirits.
Moreover, Wakayama industrial technology center announced that “jabaras have the function of suppressing the degranulation phenomenon that causes allergies such as pollinosis and rhinitis” in the 50th conference of Japanese food chemical engineer society in September 2003.

Roasted sushi of fatty tuna

Boiled abalone

We have so particular preference for eggs that we procure them from Yamagata Prefecture. They are grown up with great care. Good materials and environment, food and water are very important for delicious eggs. We procure eggs of chickens raised on the Iide Mountains in Yamagata Prefecture with the underground water and clean air. Due to such factors, chickens grow vigorously. Natural ingredients such as ground nutrients (beech tree extract, wood vinegar, etc.), safflower, which is a prefectural flower of Yamagata, and rice bran bring lactic acid bacterium to the chickens, and the bacterium make intestinal environment of chickens better. Please enjoy omelet made with so produced eggs what is called “safflower egg” that has antioxidative effect and without specific odor. The soup stock that goes with the eggs is made from tuna without peculiarity and blood and kelp from Hokkaido Prefecture.
